Commercial honey
Usually heated to 140–160°F to delay crystallization and improve filtration speed, then pushed through very fine filters at pressure. In 2011, Food Safety News commissioned pollen analysis of supermarket honey by Vaughn Bryant, a melissopalynologist at Texas A&M University. The widely reported finding: roughly 76% of the sampled honey from grocery stores contained no measurable pollen. In products from drugstores and individual-serve packets, the figure was higher still.
The industry's defense was that ultrafiltration improves clarity and shelf life. That's true. It's also true that ultrafiltration is the only reliable way to make honey's origin untestable, and that this is convenient for anyone routing honey through third countries to dodge tariffs or import restrictions.
The Supply Chain: Most U.S. Honey Isn't From the U.S.
This surprises people. According to USDA National Agricultural Statistics Service data, U.S. honey production runs in the range of roughly 125–150 million pounds per year. U.S. consumption is several times that. The gap is filled by imports.
Which means: when you buy an unbranded honey bear at a large retailer, the odds are strong that it is a blend from multiple countries, and that you cannot verify which ones. "Packed in the USA" on a label refers to where it was bottled, not where the bees were.
Buying local collapses that entire chain into one step. You know the apiary. Often you know the beekeeper.
Does the Flavor Actually Differ?
Yes, dramatically, and this is the least controversial part of the comparison.
Honey's flavor comes from the nectar source. Orange blossom honey from Florida tastes nothing like buckwheat honey from upstate New York, which tastes nothing like tupelo, sourwood, or high-desert mesquite. Local honey is typically single-region and often close to single-floral, so it carries that character.
Commercial blends are formulated for the opposite goal: consistency. A national brand needs jar #1 and jar #4,000,000 to taste identical, which requires blending away the very variation that makes honey interesting.
If you have only ever eaten blended supermarket honey, you have effectively been eating one flavor of a food that has hundreds.
Nutrition: Real, But Modest
Let's keep this proportionate. Honey is about 80% sugar. Raw local honey does contain more of the following than heavily processed honey:

Here's the problem: seasonal allergies are overwhelmingly caused by wind-borne pollen — ragweed, grasses, and trees. Bees collect insect-borne pollen from flowering plants, which is heavier, stickier, and largely not what's making you sneeze. The pollen in honey is mostly the wrong pollen.

- The label names a place and a floral source. "Wildflower, Sonoma County" beats "Pure Honey."
- There's a beekeeper's name on it.
- It's not the cheapest jar on the shelf. Honey is expensive to produce honestly.
And if it does crystallize: warm the jar in water under 104°F. Don't microwave it — that's just doing commercial processing at home.
